More Baking: Keys 797 - 833
My (cook)kie baking adventure continued. I made quite a few of those delicious cream cheese spritz cookies...64 to be exact (well, there were more but I ate some of them before they were finished).
After that I made my husband's very favourite Swedish Almond Cookies. An Allen Christmas tradition.
Here's that recipe:
Swedish Almond Cookies
Cream 3/4 c butter
3/4 c sugar
Add 1 egg
1/3 c ground almonds
1/4 tsp almond extract
Blend well
Stir in 2 1/2 c sifted all purpose flour, mixing thoroughly
Roll dough slightly less than 1/8 inch thick on floured board
Cut into cookies using 2 1/2 inch scalloped cutter
Place cookies on ungreased sheet
Bake 350 degrees for 7 1/2 minutes or until lightly browned
Filling:
Cream 1/4 c butter until soft
Add dash salt
Add egg yolk
1/4 tsp almond extract
Blend well
Alternately add in 1/4 c raspberry jam with 2 cups icing sugar
Spread filling over 1/2 of cookies and top with other half
Melt 2 squares unsweetened chocolate and drizzle over cookies
Garnish with toasted almonds.
I usually double everything but the filling (I end up with enough filling to freeze some for more cookies on another day). I've never managed to roll the dough less than an 1/8 inch thick so my cookies are on the thicker side.
I only made seven of these cookies into keys. Sadly I dropped Key 832 on the floor. I put it back together and counted it anyway.
